Spring Menus!

Ok well, I really feel it wouldn’t be a Bella  Vendetta site  if we don’t talk about food. My senses involving taste and sex have always been a little bit intermingled so it only makes sense.

I’ve got two events coming up I am menu planning for and wanted to share the goodness with all of you here.

Man holidays and special food occasions coming up so I wanted to list them all!

First of all we’ve got EASTER this weekend!

Easter was always a special holiday in My house, with Jewish and Catholic Italians in the famil, we had a weird mishmash of traditional foods.  A ritual of killing the first spring lamb and making several dishes out of the different parts of the lamb.

Lamb ragout a big heart deep red sauce with chunks of slow cooked lamb in it.  My Grandmother and then later My father would always make homemade cavatelli with ricotta for that.

We’d do blood sausage made out of the intensitine.  Never M favorite part as a kid but something I fondly remember and crave as an adult.  Served with some bitter dandelion greens and a side of spicy peppers and garlic and of course crusty bread.

The head we would roast whole, and My father would eat the eyeballs and the brains on bread with the hot peppers.

I never really got into that part.

We would also roast or BBQ over a fire depending, a whole leg, marinated in whole grain mustard and fresh herbs and mint.

As M family grew and included members from India we added some dishes.

Another leg we would also roast whole, inside the oven, with basmati rice and whole boiled eggs, raisins and spices. Lamb biryani! And that also included some side dishes like raita yogurt sauce and spicy pickle and a whole other flatbread.

There was always appetizers of course and roasted vegetables on the table and salad so much salad.

And then like 3 types of desserts and I think that would change depending who we had over.

M father’s versions of the multi lamb dish Easter grew to epic proportions, with family members flying in from other countries to attend.  Usually this involved Me running around like a prep cook for My father and never really getting to sit and enjoy the dishes.

For a few years I held My own versions of the holiday, usually just doing the three dishes, the ragout and pasta, roasted leg and lamb biryani.  Then it went to just one lamb dish.

Since covid these little get togethers have been just Me and Brook Rain, so we’ve downscaled alot.

This year, we’ve decided to do Easter American style.

So the menu looks like this:

Smoked, baked ham with a brown sugar glaze.

Scalloped potatoes with three kinds of cheddar cheese

Creamed pearl onions

Peas and mushrooms in a butter sauce

And salad.

Dessert is going to be mini custard pies with fresh fruit on top.

We’ll have some appetizers as well, veggies and hummus, chips and dip, and devilled eggs.

We do our own little ritual of hand mixing dyes and coloring eggs.

I will NOT be working on Easter so I’ll just be cooking and then eating and chillaxing.  Th only other plan is to soak My feet and hands and give Myself and Brook both a mani/pedi.

To get ready for the wedding!

Immediately after, the day after I will be soaking beans, deboning the ham, and making hamstock!  WWe’ll be eating leftovers monday, and tuesday I will be making a big pot of split pea soup with ham!  Which we will be eating before, and have something to eat after the wedding festivities have died down so I don’t have to think about cooking right away.

Mon& Tues I will be prepping!  Baking the cake.  Yah, I am making My own cake.

It’s going to be a three tiered red velvet cake with cheesecake custard in the middle and cream cheese frosting decorated with fresh berries.

The wedding is wednesday, which I can hardly believe.

I have My dress all ready and everything but the flowers.

After the ceremony we have some simple appetizers.  A cheeseplate, fruit plate, pasta salad, devilled eggs, pepperonis, olives and crackers.

We are going to My favorite local restaurant for an early dinner and they are seating us outside..

We should have enough time in between for lots of photos! (yes, I will be sharing here)

Some drone flying, and being able to hit up a few dispensaries to get the 420 sales!

A ver exciting time!

After that, it’s ten days OFF no work.  Don’t worry the site will continue to be updated with fresh content multiple times while I am enjoying My wife & My life.
